Chorizo Egg Bake

Chorizo Egg Bake

 10 eggs
 1 cup sour cream or yogurt
 4 cups frozen kale, chopped
 15.50 oz - 1 can of beans
 4 tbsp green chilies
 1 cup cheese
 1 lb chorizo
 salsa for serving

Preheat oven to 400 degrees. Brown chorizo.

Crack all eggs into the 13 inches by 9 inches by 2 inches. Whisk until all parts are covered in yellow.

Whisk in the sour cream or yogurt. Whisk until no big clumps remains.

Add in kale, beans, green chilies, chorizo, and 3/4 of the cheese. Mix.

Put egg mixture in oven for 30-35 minutes.

Take egg bake out. Sprinkle rest of the cheese on the egg bake. Bake for 2-3 more minutes, or until golden brown.

Serve with salsa. Enjoy!

    Wow, that looks delish! Great photos!
    Do you freeze the kale for chopping reasons? Or to show you can use frozen in this dish? Fresh will work just as well?

      The kale makes it crispier so it gets chopped up better. You can use both if you want to. I personally think that frozen is better in the dish, but you can do it with fresh kale.
