Chorizo Egg Bake

 10 eggs
 1 cup sour cream or yogurt
 4 cups frozen kale, chopped
 15.50 oz - 1 can of beans
 4 tbsp green chilies
 1 cup cheese
 1 lb chorizo
 salsa for serving

Preheat oven to 400 degrees. Brown chorizo.

Crack all eggs into the 13 inches by 9 inches by 2 inches. Whisk until all parts are covered in yellow.

Whisk in the sour cream or yogurt. Whisk until no big clumps remains.

Add in kale, beans, green chilies, chorizo, and 3/4 of the cheese. Mix.

Put egg mixture in oven for 30-35 minutes.

Take egg bake out. Sprinkle rest of the cheese on the egg bake. Bake for 2-3 more minutes, or until golden brown.

Serve with salsa. Enjoy!
